BAVARIAN
Bavarian lye dough triangle, it is a crispy outside and soft buttery pastry inside. Traditionally, in Germany for the process, they use the so-called lye or sodium hydroxide. A less demanding, but also much more accessible technique is preparation with Bicarbonate of soda. The pastry is first baked in the oven to change the structure, then immersed in one of the chosen solutions.
PINSA
It is an Italian specialty with roots in ancient Rome. The dough has a low gluten content, because is made from several types of flour (soybean, rice and wheat) and matures for as long as 48 hours, so it is extra friendly for your metabolism. It is crispy on the outside and tender and soft on the inside.
TEAM
We are a team who have been walking together for many years. Our story began with a pizzeria, which in fifteen years of pizza delivery became and according to some remains one of the most popular in the city. Then we threw ourselves into sandwiches, because we saw that in Ljubljana you can hardly find a really good and decent sandwich.
That's why we opened a sandwich shop on Trubarjeva and thus solved this problem. From 2022, we offer both citizens and visitors of the most beautiful city in the world freshly prepared sandwiches for almost every taste. It's true that a sandwich is usually eaten on the go, but it often happens that the vibe stops you at front with a glass of wine or a pint of brandy, but that's another story...
